What happens when you mix Tex-Mex with the Taj Mahal? During a trip to India in September 2019, Andy met with U.S. trade officials and Arjun Datta, COO of the International Institute of Culinary Arts (IICA) in New Delhi. The goal? To create partnerships and provide responsibly-sourced ingredients from the U.S. to India. 

In today’s installment of this Eatyall encore series, Arjun tells Andy about the qualities the IICA instills in its students, its partners, and to India itself, in an effort to train chefs known for their positive attitude as well as ability. And later, Andy is joined by Sid Miller, president of SUSTA and the Commissioner of Texas Agriculture, and Wes Ward, Arkansas’ Secretary of Agriculture, for a chat about introducing American-grown ingredients to India’s expanding palate. Enriching The Culinary Future Of India

Chef As Career Path. Arjun tells Andy about his father’s path through hotel management, cooking, and education before founding the IICA. Learn why cooking as a profession is becoming more common in India, and which steps Arjun’s institute has taken to train chefs from all backgrounds – even former lawyers and accountants.

From India To The World. The IICA trains its chefs to meet the standards of partnering nations and corporations, but also to build a menu with locally-sourced ingredients and a budget in mind. A graduate of Manchester Metropolitan University, Arjun’s combined experience in hospitality, business management, and cooking has formed IICA corporate partnerships with the likes of Whirlpool and Hamilton Beach, as well as high-value placements for institute graduates.

Serving as Commissioner of the Texas Department of Agriculture since 2014, Sid Miller is also the President of the Southern United States Trade Association (SUSTA). A dedicated advocate of Texas agriculture, Sid oversees the Go Texan program – a marketing initiative to promote Texas companies and their products across the world.

A lifelong Arkansan and member of the U.S. Marine Corps, Wes Ward has served as the Arkansas Secretary of Agriculture since 2015. A graduate of the University of Arkansas, Wes represents the state’s food producers by working to bring their products to the next generation of chefs in the United States and abroad.
